Joesph Smithmyer: A perfect protein : Beans and Rice with coconut milk you need: 1 can of black beans, 1 cup jasmine or basmati rice 1 - 2 cloves garlic fresh ginger onion salt olive oil (or whatever oil you have at hand) chili powder - as hot as you like it 1 can coconut milk any or all of the following: 1 -2 lime leaves (no biggie if you don't have it) 1 tsp coriander (ditto) 1 tsp cumin (ditto) drain the beans and rinse well, put in a colander and set in a bowl in water to soak/ rinse heat a pan with 1-2 tsp olive oil on med/high chop the onion and saute in the olive oil 5-6 minutes mince the garlic and ginger and add to the onion, saute 1 minute add the cumin, coriander, chili powder and lime leaves, saute 1-2 minutes add the rice and saute 1-3 minutes u! ntil see opaque, or completely white add 1/2 cup of water, sti! r until absorbed add the can of coconut milk, cover add 1 tsp salt reduce heat to med / low, cook 15 - 20 minutes until all liquid is absorbed, stirring occasionally if rice isn't soft enough for your taste, add a bit of water a very easy and fast recipe that can be tweaked to taste good served with hot sauce and avocados...Show more
